Raw Blueberry Pie
I am not positive where I first tasted this pie, but I believe it was Raw Food Chef Tom Frazier who introduced it. This pie is delicious! One of my friends requests it for her Anniversary celebration!
RAW BLUEBERRY PIE
Crust:
1 C shredded dry coconut
2 C raw macademia nuts
¼ t sea salt
dash cayenne pepper
1/3 C pitted dates
Pie Filling:
3 C blueberries
½ C pitted dates
2 t lemon juice
1/8 t cinnamon

Process coconut until it is coarsely ground.
Add nuts, salt, pepper.
Add dates til it sticks together.
Press into pie plate.

Blend 1 C blueberries with dates, lemon juice, and cinnamon in food processer or vitamix
Mix by hand with remaining 2 C berries.
Fill crust.
Chill 1 hour
